We’re redefining the humble smoothie

Do you have the confidence to whip up a fruit smoothie at home? Then you can make this. All you need to do differently is swap the fruit smoothie  ingredients for savory ones, add heat, and blend your way to a bold, nourishing meal with Chef Marco’s latest obsession: savory smoothies.

These luscious, whole food-based Brodo smoothies are made with (you guessed it) Brodo, healthy fats, vegetables, and flavorful add-ins like garlic, herbs, and Parmesan. They’re deeply satisfying, full of protein, fiber and healthy fats. They’re also low in sugar—making them a smart alternative to traditional sweet smoothies.

Just like a fruit smoothie, they’re easy to make and perfect for sipping on the go.


Why Savory?

Traditional smoothies rely on bananas and fruit for sweetness and creaminess. But savory smoothies rely on a balance of Brodo, vegetables, and healthy fats to make them utterly satisfying. We swap in:

  • Brodo instead of alternative milks  – we use Brodo to provide protein and to help blend everything together
  • Optional added protein and nutrition such as beans, an egg, and/or seeds like flax, chia, or pumpkin
  • Vegetables for a variety of textures and flavors (and fiber)
  • Olive oil, butter, ghee, and other healthy fats for creaminess instead of fruit
  • Spices and herbs like garlic, turmeric, ginger, or chili to build bold flavors
  • Acids like citrus and vinegar to add brightness

Why Cooked?

Cooking food enhances digestibility by breaking down complex structures, making nutrients easier to absorb. Proteins denature, starches gelatinize, and fiber softens, all of which help reduce bloating and digestive discomfort—especially for those with sensitive guts. Cooking also increases nutrient bioavailability by making compounds like lycopene and beta-carotene more absorbable and by breaking down anti-nutrients that inhibit mineral absorption. Additionally, heat destroys harmful pathogens, lowering the risk of foodborne illness and supporting better gut health and long-term nutrient intake.


How to Make a Brodo Savory Smoothie

The process is simple:

  1. Add all ingredients to a pot.
  2. Bring to a boil and reduce to a simmer.
  3. Cook with the lid on for 3 minutes.
  4. Blend while hot until smooth.

*When adding egg, add it raw to the blender before blending.

Each recipe below serves one generous portion or two small mugs—feel free to scale up and reheat as needed. Just like you do with a fruit smoothie, you can easily adjust for thickness but instead of adding more or less milk, add more or less Brodo.

Tuscan Bean and Tomato Brodo Smoothie

This Brodo Smoothie is featured at our window in the East Village. People love it for the nostalgia value – it tastes like the best tomato soup you’ve ever had. Instead of thickening with flour we add creaminess and extra protein with the addition of cannellini beans. Try it on its own as a delicious on-the-go lunch or dip some toasted sourdough bread into it.


Asparagus and Egg

This recipe is a celebration of spring – featuring earthy asparagus, bright herbs, savory Parmesan, and grass-fed butter. It also has an added egg for an extra creamy mouthfeel.


Mushroom Scallion

We love the way the umami in mushrooms complements the umami in Brodo, which lead Chef Marco to create this recipe. It’s also easily made into a vegetarian version by using our Organic Mushroom Brodo and omitting the fish sauce.
