Tuscan Bean and Tomato Brodo Smoothie

This Tomato and Bean Brodo Smoothie got its start at our window in the East Village. People love it for the nostalgia value – it tastes like the best tomato soup you’ve ever had. Instead of thickening with flour we add creaminess and extra protein with the addition of cannellini beans. Thanks to the protein, healthy fat, and fiber content it’s satisfying enough on its own as a delicious on-the-go lunch and we also love dipping some toasted sourdough bread into it.

Any Brodo base broth would work deliciously, but we prefer . We love the Spicy Nonna in this recipe but any Brodo base broth (Chicken, Beef, Hearth) would work deliciously too.

Ingredients

  • 1 cup cherry tomatoes cut in half
  • 1/2 cup cannellini beans (from a can is fine)
  • 1 clove garlic
  • 2T evoo
  • chili flakes or fresh chili
  • 2T grated parmesan
  • \1 pouch spicy nonna broth
  • 1 cup Brodo (we prefer Spicy Nonna )

Instructions

  1. Add all ingredients to a pot
  2. Bring to a boil and cook for 3 minutes over medium heat with a lid
  3. Blend while hot.
