To celebrate our favorite season, we’re rounding up some of our favorite soup recipes. Keep in mind these recipes are designed to be easy and flexible, so don’t fret if you don’t have all the ingredients.
The only essential ingredient in these recipes is, you guessed it, Brodo! Make sure to stock your pantry with your favorite Brodo bone broths and you can create magical recipes with veggies and other ingredients you likely already have!
Marco’s Go-To Chicken Noodle Soup
Simple, classic, glorious. These are the three words that come to mind when we think of our founder, Chef Marco Canora’s chicken noodle soup recipe. Inspired by the Jewish delis of NYC, this recipe hits the spot when you’re craving something warm, healing, and nutrient-dense. Marco puts an Italian spin on the “gold coins” so check out the recipe to find out the secret!
Homemade “Instant” Noodles
This soup will remind you of those long nights studying for the final exams when all you had time (and money) to eat was Instant Noodles. This soup season recipe comes together “instantly,” but unlike the true “instant” version this one is delicious and nutritious. You’ll definitely want to add this fun, tasty, and portable recipe to your food prep repertoire!
An Easy Lentil Soup
Part of our mission at Brodo is to teach people to cook simple, delicious meals with what you already have. This “recipe” is just that – it’s more of a guide than a recipe. If you have lentils, Brodo, and a few vegetables on hand, you’ll have a delicious and nutritious meal ready in about 20 minutes or less! Serve with some crusty bread or kale salad and you have a soup season celebration that’s fit for the whole family.
This is Chef Marco Canora’s favorite soup. Need we say more? Ribollita is a classic Italian soup that’s featured at Marco’s restaurant Hearth from the beginning of fall through the end of winter. If you can’t make it to the East Village for a bowl, the next best thing is to make it yourself!

In early fall when the peppers turn sweet and bright red is the perfect time to make this recipe. We like it because it’s packed with protein and can be sipped from your favorite mug. Sip it while walking to your next appointment, on the subway, or even at your computer.
