There are many reasons to love a classic pumpkin spice latte – the aroma of pie spice, the cozy pumpkin flavor, and the dollop of cream on top. But there are just as many reasons to avoid it – until now.

ButcherBox reached out to us for a collaboration and we knew we had to put our heads together to make a tastier, healthier version of this fall favorite. We swapped the coffee for Brodo bone broth, the high fructose corn syrup for a touch of maple syrup, and added a touch of ButcherBox beef tallow for added creaminess. Then we topped it with a couple dollops of lightly sweet cardamom whipped cream.

You may want to make this recipe when you have extra roasted pumpkin (or winter squash) from another recipe – or freeze the extra in an ice cube tray so you can easily make more whenever a craving for a pumpkin spice latte hits. Keep in mind the amount of whipped cream this recipe makes is enough for many lattes but you can use it for other purposes as well (on top of pie, to eat with a spoon as a midnight snack, or add a dollop to hot chocolate).

  1. To make the cardamom cream, combine the heavy cream, cardamom pods, vanilla, and maple syrup in a small saucepan and bring to a boil.

  2. Turn off the heat and let it steep for 15–20 minutes so the cardamom can fully perfume the cream.

  3. Strain out the pods, chill briefly, then whip to soft peaks.

  4. To make the latte, combine beef tallow with the pumpkin spice blend.

  5. Bring the broth to a boil in a small saucepan, or heat it in the microwave until steaming hot.

  6. While it heats, add the squash purée, beef fat, and ginger juice to a tall mug or blending cup.

  7. Pour the hot broth over the base and blend with a stick blender until smooth and frothy.

  8. Spoon the cardamom cream on top and serve right away.
