This savory oatmeal recipe is our attempt to do better by our friend, the oat. Oats do a lot for humans – they give us fiber, protein, and various vitamins and minerals. Oats also give us energy in the form of carbs and are considerate enough to make them slow-release to avoid spiking our blood sugar.
Then what do we humans do? We load them with fake maple syrup or, God forbid, a few spoonsful of white sugar. And then we wonder why we’re hungry twenty minutes later and proceed to suffer an energy crash.
It’s time to honor this grand gluten-free grain and give it the treatment it deserves. Just like many of our “recipes,” this is going to be more of a lesson on technique and then we invite you to take it in whatever direction you’d like.
Now go forth and conquer your morning with a delicious bowl of savory oatmeal!
Ingredients
- 1/2 cup rolled oats
- 1 pouch Brodo (we prefer either Organic Chicken or Deeply Rooted)
- Pinch of salt
- Optional toppings of your choice: jammy egg, wilted spinach, black pepper, Parmigiano-Reggiano, avocado, gomashio seasoning, bacon bits, kimchi, blueberries, grassfed butter, go wild!
Instructions
-
For an additional cheffy touch, toast the oats in a castiron skillet until slightly browned and fragrant (completely optional).
- Add the oats, pinch of salt, and bone broth to a medium-sized pot with plenty of extra room to prevent boiling over.
- Bring to a gentle boil over medium-high heat and immediately turn heat to low. Simmer until oats absorb all the liquid and turn tender.
- Top with any and all optional toppings you’d like!
